#36 Meal Plan Monday 2017

Happy Monday! We are all feeling a bit pooped around here today after a big weekend. It was wonderful to spend time with family though. I hope you all had a lovely Father’s Day with the Dad’s in your life.
This week we have something on at our son’s school Thursday so we will be eating out that night. Other than that it’s a pretty standard week around here.

#30 Meal Plan Monday 2017

This week is a special one in my house because it is my husbands 30th birthday on Saturday! I let him pick our meals for the week and you will notice there is a lot of beef! We’re going out for lunch on Sunday to celebrate, so dinner (if anyone is actually hungry) will just be simple.

Basic Fritter Recipe

I’ve written about different things you can make with leftover roast meat before but one of my favourite things to make with left over corned beef is fritters.  Fritters is one of those simple recipes that is great because you can add whatever you’d like to them to mix it up. I’m quite fond of corn and zucchini fritters but my son’s favourite are what he likes to call “Meat Pikelets”.

Basic Fritter Recipe

You will need:
1 1/2 cups self-raising flour
1 cup milk
2 eggs
1 tablespoon olive oil
Salt & Pepper

You can add to this whatever mix-ins you would like. To make these “Meat Pikelets” I added:
1/2 cup grated cheese
Leftover corned beef

  1. Whisk eggs and milk together in a large mixing bowl.
  2. Add flour and stir to combine.
  3. Mix in any add-ins.
  4. Heat olive oil in fry pan over a medium heat.
  5. Once the pan is hot, add spoonfuls of mixture and spread out slightly with the spoon.
  6. Flip after 3-4 minutes. They are ready to turn when bubbles appear on the surface.
  7. Continue to cook for another 2-3 minutes until both sides are golden brown.

You can serve them immediately with a salad or veggies. Any leftovers are great cold. My son likes to take 1 or 2 for lunch the next day.

5 Ways to Use Up Leftover Roast Meat

Now that the weather is cooling down, baked dinners start to feature more often in our weekly meal plans. While not always the cheapest meal there’s just something so lovely about a delicious weekend roast I just can’t resist and they come with the added bonus of… Leftovers! Not one to let things (Food especially!) go to waste, I love to come up with different ways to use up leftovers so this week I’ve put together 5 ways to use up leftover roast meat.

  1. Sandwiches – Leftover roast meat is great to use as sandwiches fillings for lunch. Use a few slices of your favourite bread, add some sauce or pickles, and salad if you swing that way and Voila! You have a cheap, delicious lunch.
  2. Curry – This is probably my favourite thing to do with leftover roast meat. Curry is an easy, delicious meal to add to your weekly meal plan and using leftover roast meat makes it a super cheap dinner as well. I think I am going to write a separate post on how I make my curries so keep your eye out for that.
  3. Pasta – Another cheap, easy meal to make with leftover meat is a simple pasta dish. Boil some pasta, whatever you have in the cupboard will do. Heat up the meat and add it to the pasta. Stir through some sauce and top with a bit of grated cheese. Simple and delicious!
  4. Stock – Save (freeze if you have to) any meat bones and use them to make homemade stock.
  5. Pizza – Those of you who follow my Meal Plan Monday posts will know we have Pizza Party Friday Night every week. Leftover roast meat and vegetables make awesome toppings for homemade pizzas. If you’d like a post on how we make our pizza’s let me know in the comments.
