#46 Meal Plan Monday 2017

So our first go at Porkchop cooking dinner last week didn’t get off to a great start. He had school swimming last week and came home pretty wrecked so asked if I could help him, which was totally fine. He’s keen to give it another go this week though and has decided to try cooking nachos. Yum!

White Chocolate Coconut Truffles

These are a lovely little treat I love to give as a gift. They’re simple to make but super delicious. I’m not generally a fan of white chocolate but love the combination of it with the coconut. You could however use milk or dark chocolate if that’s your preference.

You will need:
200g white chocolate
1/4 cup coconut cream
1/3 cup desicated coconut

  1. Place chocolate into a microwave safe bowl and melt in the microwave. I put mine in for 60 seconds, give it a good stir, then pop it back in for another 60 seconds.
  2. Add coconut cream and mix well until combined.
  3. Stir in coconut.
  4. Refrigerate until firm.
  5. Roll into balls.
  6. Refrigerate again, just to harden them back up.

That’s it! Like I said they are very simple to make, the most time consuming part being waiting for the mixture to firm up. This usually takes about an hour but I have made the mix before bed and then rolled it into balls in the morning. You could also coat them in extra melted chocolate if you wanted to but that’s a bit too fiddly for my liking. If you give them a go I’d love to hear what you think!

#36 Meal Plan Monday 2017

Happy Monday! We are all feeling a bit pooped around here today after a big weekend. It was wonderful to spend time with family though. I hope you all had a lovely Father’s Day with the Dad’s in your life.
This week we have something on at our son’s school Thursday so we will be eating out that night. Other than that it’s a pretty standard week around here.

#35 Meal Plan Monday 2017

This Sunday is Father’s Day in Australia. Is anyone surprised that my husband has requested we have some sort of beef for dinner? What have you got planned for Father’s Day? I’d love to hear about it in the comments.

Cheese Sauce Recipe

If you read this week’s Meal Plan Monday you will know I made corned beef this week (as well as a lot of other beef meals!), so of course I had to make cheese sauce. It’s one of those simple recipes, like fritters, that you can add different things to and use in different ways, but with corned beef my family loves just a basic cheese sauce so I thought today I would share how I make it.

You will need:
50g butter
2 tablespoons plain flour
2 cups milk
1 cup grated cheese
Salt

  1. Melt butter in a medium saucepan over medium-high heat until it’s all nice and bubbly.
  2. Add flour and stir for about a minute.
  3. Remove the saucepan from the heat and slowly add the milk, stirring constantly. I find the best thing to do is add a little bit at a time and make sure it’s really combined before adding anymore to make sure it doesn’t end up lumpy.
  4. Return to heat and cook while stirring,  for about 10 minutes, until  the sauce comes to the boil and thickens.
  5. Remove from heat and stir in the cheese and salt.

So there you have my basic cheese sauce recipe.  It’s very simple but that’s what my boys seem to like. Do you add anything special to your cheese sauce to make it a bit fancier? I’d love to hear about  it in the comments.
